NORFOLK — Coelacanth Brewing Company is releasing a new Mexican stout later this month. “Against the Wall” was created after the Virginia-based brewery combined efforts with Mexico City artisanal brewery, Cervecería Artesanal Roberta.
Coelacanth’s owner, Kevin Erskine stated that “we love making beers from other cultures,” adding that they’ve wanted to create an “authentic Mexican beer” for a while now.
To achieve the authentic flavor of Mexico, Erskine looked to friend and owner of Cervecería Artesanal Roberta, Fernando Bayardo. After collaborating over phone and video calls, the two breweries crafted this distinct “winter brew.”
This oatmeal-based stout is brewed with chocolate and chipotle peppers. Bayardo even sent Mexican spices, peppers, and chocolate for the recipe, while the head brewer and director of brewing operations for Coelacanth, Matt Topping, perfected the stout.
“Against the Wall” will be available for consumers to taste and purchase on Dec. 23 at Coelacanth Brewing Company located in Ghent. A portion of the sales of the beer will go to Operation Smile for a mission in Mexico.
