WILLIAMSBURG — Don Chido founder and head chef Abner Alba opened the restaurant’s brick-and-mortar location July 2 with a ribbon-cutting with the Greater Williamsburg Chamber of Commerce and his staff.

Alba, a Guatemalan immigrant, started his journey by working his way through every kitchen station. He honed his craft until eventually he was able to open Don Chido as a food truck. From there it evolved until it became the restaurant that debuted last week.

The restaurant’s fare is described as modern Latin flavors, serving cocktails, tacos and tapas among other Latin dishes. It takes its name from two Spanish words, “Don” which is a title of respect and “Chido” which means cool, bold or unforgettable.

“We wanted to do something that when you walk in, we transport you somewhere else,” Alba said at the event.

Don Chido is located at 515 Prince George St. in Williamsburg. Hours are Monday through Thursday from 11 a.m. to 9 p.m. and Friday through Saturday from 11 a.m. to 10 p.m.
