First Watch on track to open in New Town by end of October

First Watch is making its first foray into the Williamsburg market by the end of the month.

First Watch operates 240 restaurants nationally and is known for its made-to-order breakfast, brunch and lunch, according to a news release.

The company announced in March it would open a restaurant in New Town in 2018, and confirmed Friday they will open on Oct. 29.

“I’m super excited,” said Adam Fore, general manager. “This is something I’ve been waiting for.”

The daytime-only restaurant will set up shop in an endcap next to Bonefish Grill. Their scheduled hours are 7 a.m. to 2:30 p.m., 7 days a week.

The restaurant will be about 4,200 square feet, with more outdoor seating for diners.

About 25 people will be employed, said Elini Pierce, First Watch public relations and communications manager.

The menu is composed of their take on breakfast staples like bacon, eggs and omelets, waffles, pancakes, toast and more, including vegan and vegetarian options.

“We have a bit of everything for everybody,” Fore said.

He added that work inside the restaurant is still ongoing, but the crew will wrap up in time for the grand opening.

The remaining work is mostly cosmetic, Ford said, including painting, installing furniture and ceiling tiles, and placing the marble counter tops.
