
A two-time “Iron Chef” champion will share stories and skills at a program Thursday at the College of William & Mary.
Chef Katsuya Fukushima, who won the television cooking competition twice and co-owns Daikaya and Izakaya in Washington, will give a presenation titled “From El Bulli to Hokkaido: A Chef’s Culinary Travel.”
Starting at 5 p.m. in McGlothlin-Street Hall Room 20, the event is free and open to the public. Fukushima will discuss his career and passion for cooking, as well as give a demonstration.
Fukushima was trained by renowned Spanish chef Ferran Adrià and is a longtime collaborator of José Andrés, the nationally recognized chef/owner of ThinkFoodGroup who has restaurants throughout the country.
Although well-versed in molecular gastronomy — a field that focuses on the physical and chemical processes involved in cooking — Fukushima’s newest venture centers on traditional Japanese ramen.
Daikaya and Izakaya, two separate restaurant spaces a floor apart in the capitol, were named among the top 50 new restaurants in America for 2013 by Bon Appetit Magazine.
Prior to his talk in the evening, Fukushima will speak to Professor Stephen Sheehi’s class on “The Culture of Arab Food.”
