WILLIAMSBURG — Burgers on the Edge, a new restaurant and commissary kitchen, will celebrate its grand opening on July 18 in the Edge District.

The restaurant opened to the public in late June.

Owner Chris Waller, who also owns Bald Guys Pies, has been cooking since he was a child with his parents. As he grew, he found he enjoyed it more and more, learning new skills and acquiring cookbooks, and decided to make it his career.

His first job was at Daddy O’s Pizza in Norge. He then moved to Blue Talon Bistro before attending culinary school for two years.

He continued his career at the Williamsburg Inn before he and his wife moved to San Diego in 2018. After the birth of their daughter, Waller and his family moved back to Williamsburg in 2023 and started Bald Guys Pies. The business launched with just a tent and two backyard pizza ovens.

“It got to the point where we needed a bigger kitchen, and that’s how we came about this space, creating this commissary kitchen space for ourselves, and then we wanted to try and rent it out. Then it was still such a huge space that we decided maybe we should try and open up a restaurant here too,” Waller explained.

Bald Guys Pies had done some pop-ups with burgers, but it led to some branding confusion. The food truck went back to being strictly about pizza, and Burgers on the Edge was born.

The kitchen is home to 24 feet of prep tables, with the possibility of adding another 12 feet for people to use as prep stations. Only 12 feet is used by the restaurant; the remaining space is for the commissary side of the business.

In addition to the celebration, Burgers on the Edge is looking to do a pay-it-forward program with its grand opening. People will be able to come in, buy a meal, and receive a ticket where they can write what they ordered. Anyone who comes in and needs it can grab that ticket, no questions asked, and get that meal.

The grand opening will be on July 18 at 4 p.m. The event will feature a ribbon cutting with York County Economic Development.

Burgers on the Edge is located at 455E Merrimac Trail in Williamsburg and opens at 11 a.m. The restaurant closes at 7:30 p.m. on Sunday, Monday, and Thursday, and closes at 8:30 p.m. on Friday and Saturday. The restaurant is closed on Tuesdays and Wednesdays.
